Chima Brazilian Steakhouse on Fort Lauderdale’s tony Las Olas Boulevard invites you to enjoy that experience again, but with some expert assistance. Chima’s recently appointed sommelier Larry Baker makes it his job to know what wine complements which foods the most, and he’s planning a food adventure. Just consider him your taste bud tour guide.
On Wednesday, June 25 at 7 p.m., Mr. Baker will host a Wine & Food Trip Around the World dinner. The evening will feature four courses paired with selections from Chima’s impressive wine cellar. Each course will feature grilled meats served by Chima’s gauchos and a platter of accompaniments from the kitchen and salad bar, served family-style. Mr. Baker will introduce each wine and discuss the flavor profile and notes.
First Course
Wine: King Estate Oregon Pinot Gris
Meat Options: Salmon and swordfish
Accompaniment: Fresh fruits with prosciutto, hearts of palm and salmon tartare
Second Course
Wine: Borsao Tres Picos Garnacha, Spain
Meat Options: Flank steak, filet mignon and galeto (Cornish hen)
Accompaniment: Antipasti with Parmigiano Reggiano, sopresatta, olives, portobello
mushrooms and beef tartare
Third Course
Wine: Amavi Cabernet Sauvignon, Washington
Meat Options: Picanha (top sirloin), lamb chops and beef ribs
Accompaniment: Toasted yucca (farofa), Brazilian vinaigrette, black beans and rice
Dessert Course
Wine: Santa Julia TARDIO Late Harvest Torrontes, Argentina
Sweet Options: Choice of Brazilian flan, papaya cream or passion fruit mousse
